For the Chicken Gyros
  • 1 pound Boneless, skinless chicken breasts
  • 1 medium Yellow onion sliced
  • 4 cloves Garlic minced
  • 1 cup Chicken broth low-sodium recommended
  • 2 tablespoons Olive oil
  • 2 teaspoons Dried oregano
  • 1 teaspoon Ground paprika
  • to taste Salt and black pepper
For the Toppings
  • 1 cup Tzatziki sauce homemade or store-bought
  • 1 cup Tomatoes diced
  • 1 cup Cucumbers thinly sliced
  • 1 medium Red onions thinly sliced
  • 4 Pita bread warm before serving

Step-by-Step Instructions
  1. Slice the yellow onion into thin rings and set aside. Rinse the tomatoes and cucumbers, then dice the tomatoes and slice the cucumbers. Gather all fresh toppings in bowls.
  2. In a small bowl, combine minced garlic, chicken broth, olive oil, dried oregano, ground paprika, salt, and black pepper. Whisk until well-blended.
  3. Layer the sliced onions at the bottom of the slow cooker. Place the chicken breasts on top and pour the seasoning mixture over the chicken.
  4. Cover the slow cooker, set it to low, and cook for 6-8 hours, or on high for 3-4 hours until the chicken shreds easily.
  5. Remove the chicken from the slow cooker and shred using two forks. Mix the chicken back with the onions and juices in the slow cooker.
  6. Warm the pita bread. Fill each pita with shredded chicken and onion, then top with tzatziki sauce and preferred veggies.
