- In a small bowl, combine paprika, chili powder, ground cumin, ground thyme, salt, garlic powder, and ground pepper. Blend well until uniform.
- Coat chicken thighs in a large bowl with the spice mixture. Let sit for about 10 minutes.
- Preheat your grill to medium-high heat (around 400°F).
- Grill chicken thighs for 4-5 minutes per side until cooked through.
- Prepare glaze by whisking red wine vinegar and honey in a small bowl. Set aside.
- Serve grilled chicken on a platter and drizzle the glaze over it.
