Preparation
- Preheat your oven to 350°F (175°C). Grease a 9×13 baking dish with non-stick cooking spray.
- In a small saucepan, combine soy sauce, water, honey, ground ginger, and minced garlic. Bring to a gentle boil.
- Mix cornstarch with water until smooth, then stir into the boiling sauce to thicken.
- Place chicken in the prepared baking dish, surround with broccoli, carrots, and snow peas.
- Pour 1 cup of thickened teriyaki sauce over chicken and veggies, cover with aluminum foil, and bake for 30 minutes.
- After baking, shred the chicken in the dish and stir in cooked rice.
- Return the casserole to the oven without foil and bake for an additional 10 minutes.
- Allow to cool for 5 minutes before serving.
