Method
 

Preparation
  1. Preheat your oven to 350°F (175°C). Grease a 9×13 baking dish with non-stick cooking spray.
  2. In a small saucepan, combine soy sauce, water, honey, ground ginger, and minced garlic. Bring to a gentle boil.
  3. Mix cornstarch with water until smooth, then stir into the boiling sauce to thicken.
  4. Place chicken in the prepared baking dish, surround with broccoli, carrots, and snow peas.
  5. Pour 1 cup of thickened teriyaki sauce over chicken and veggies, cover with aluminum foil, and bake for 30 minutes.
  6. After baking, shred the chicken in the dish and stir in cooked rice.
  7. Return the casserole to the oven without foil and bake for an additional 10 minutes.
  8. Allow to cool for 5 minutes before serving.
