For the Salad

  • 6 oz Thick Cut Bacon Cook and crumble before adding.

For the Dressing
  • 1 cup Mayonnaise Can be swapped for Greek yogurt.
  • 2 tablespoon Olive Oil Can omit if necessary.
  • 2 tablespoon Apple Cider Vinegar Substitute with another vinegar if required.
  • 1 tablespoon Granulated Sugar Adjust according to taste.
  • 1 teaspoon Salt Season to taste.
  • 1 teaspoon Pepper Season to taste.
  • 1 teaspoon Garlic Powder Fresh garlic can be used for stronger flavor.
  • 1 teaspoon Onion Powder Omit if preferred.

Method
 

Preparation Steps
  1. Bring a large pot of salted water to a boil and cook pasta until al dente, about 8-10 minutes. Drain and rinse with cold water.
  2. While the pasta is cooking, thaw peas under cold water and cook bacon over medium heat for 5-7 minutes until crispy.
  3. In a mixing bowl, whisk together mayonnaise, olive oil, apple cider vinegar, sugar, salt, pepper, garlic powder, and onion powder until smooth.
  4. In a serving bowl, combine cooled pasta, peas, crumbled bacon, and Parmesan cheese. Drizzle dressing over and toss until evenly coated.
  5. Cover and refrigerate for at least 1-2 hours before serving to allow flavors to meld.
