  • 1 can White Beans Drained and rinsed

  • ½ cup Sliced Pepperoncini
  • ¼ cup Chopped Red Onion
  • ¼ cup Fresh Parsley Chopped
For the Cheese
  • 1 cup Cubed Provolone or Mozzarella Cheese
For the Dressing
  • 1 cup Plain Greek Yogurt
  • 2 tablespoons Extra Virgin Olive Oil
  • 2 tablespoons Red Wine Vinegar
  • 2 tablespoons Pepperoncini Brine
  • 1 tablespoon Dijon Mustard
  • 2 cloves Garlic Grated
  • 1 teaspoon Dried Oregano
  • 1 pinch Red Pepper Flakes Adjust to taste

Method
 

Step-by-Step Instructions
  1. In a medium bowl, whisk together Greek yogurt, olive oil, red wine vinegar, and pepperoncini brine until smooth, then add Dijon mustard, grated garlic, oregano, and red pepper flakes. Season with salt.
  2. In a large mixing bowl, combine garbanzo beans, white beans, turkey breast, salami, green bell pepper, cherry tomatoes, sliced pepperoncini, red onion, parsley, and cheese. Toss to combine.
  3. Pour the dressing over the mixed salad, toss gently until everything is evenly coated.
  4. Cover and refrigerate for at least 30 minutes before serving. Toss again and garnish with extra pepperoncini if desired.
