Step-by-Step Instructions
  1. Mix Marinade: In a gallon-size resealable plastic bag, combine olive oil, honey, lime juice, minced jalapeño, minced garlic, and kosher salt. Seal and mix until combined.
  2. Marinate Chicken: Add chicken thighs to the marinade bag. Seal tightly and shake gently to coat. Refrigerate for at least 1 hour.
  3. Prepare Grill: Preheat grill to medium-high heat (400°F). Spray grill grates with olive oil to prevent sticking.
  4. Cook Chicken: Place chicken on the grill. Cook for 8-10 minutes, flip and cook for another 8-10 minutes, until the internal temperature reaches 165°F.
  5. Serve and Garnish: Remove chicken from the grill, let rest for a few minutes, then garnish with chopped cilantro before serving.
