Step-by-Step Instructions
- Prep the large yellow or sweet onions by cutting them into ½-inch thick rings and separating the outer layers.
- In a bowl, combine softened cream cheese, sharp cheddar, diced jalapeños, and optional add-ins. Blend until creamy, then chill for 10 minutes.
- Stuff each onion ring with the filling carefully, ensuring not to overstuff.
- Freeze stuffed onion rings on a parchment-lined tray for 20-30 minutes to help solidify the filling.
- Prepare a breading station with flour, beaten eggs, and breadcrumbs. Dredge the frozen onion rings in flour, then egg, and finally breadcrumbs.
- Fry the breaded onion rings in hot oil at 350°F (175°C) for 2-3 minutes on each side until golden brown.
- Remove fried onion rings and drain excess oil on paper towels. Serve hot with dipping sauces.

Notes
For added crunch, consider double breading the rings. You can also use an air fryer for a healthier option.
