  1. Prepare the Vegetables: Wash and peel the carrots and parsnip. Chop into large chunks, along with the onion, to create a flavorful base. Layer at the bottom of the slow cooker.

  3. Prepare the Chicken: Remove giblets from the chicken cavity, rinse under cold water, and pat dry with paper towels.
  4. Season the Chicken: Rub the spice mixture all over the chicken, including inside the cavity for even flavoring.
  5. Place the Chicken in the Slow Cooker: Position the seasoned chicken on top of the vegetables, ensuring good balance.
