Step‑By‑Step Instructions for Strawberry Mousse
  1. Wash and hulking fresh strawberries, then blend them in a food processor until smooth.
  2. Pour the puree into a saucepan and gently simmer over medium heat for about 5 minutes.
  3. Remove the strawberry puree from heat, stir in sifted powdered sugar and fresh lemon juice, and let it cool slightly.
  4. In a small bowl, sprinkle gelatin powder over cold water and let it bloom for about 3 minutes.
  5. Heat the bloomed gelatin mixture on low until it dissolves completely.
  6. Slowly pour the dissolved gelatin into the cooled strawberry puree while stirring continuously.
  7. Whip the heavy cream until soft peaks form.
  8. Carefully fold the whipped cream into the strawberry puree until fully incorporated.
  9. Spoon the mousse into serving cups and refrigerate for at least 6 hours until set.
  10. Top each serving with chantilly cream, garnish with fresh strawberries and optional herbs before serving.
