  • 0.5 cup Low-Fat Milk can use almond or soy milk
  • 1.5 teaspoons Kosher Salt adjust to taste
  • 0.5 teaspoon Freshly Ground Black Pepper
  • 0.75 cup Part-Skim Mozzarella divided
  • 0.75 cup Sharp Cheddar divided

Step-by-Step Instructions
  1. Preheat the oven to 375°F (190°C) and prepare a casserole dish with cooking oil.
  2. Cut Russet potatoes in half and boil in salted water for 8-10 minutes, then drain and cool.
  3. Grate the cooled potatoes into a large bowl using a box grater.
  4. In a mixing bowl, whisk together melted butter, cream cheese, Greek yogurt, milk, salt, and pepper until smooth.
  5. Fold the grated potatoes into the creamy mixture, then stir in chopped green onions and half of the shredded cheeses.
  6. Spread the potato mixture in the casserole dish, topping with the remaining cheeses.
  7. Bake in the oven for about 30 minutes, or until cheese is melted and golden.
