Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and grease a 9x13-inch baking dish with olive oil.
  2. Sauté cauliflower rice in olive oil over medium heat for 5-10 minutes until golden.
  3. Layer the sautéed cauliflower rice in the prepared baking dish as the base layer.
  4. Brown the ground beef with chopped red bell pepper and diced onion for 5-7 minutes.
  5. Add taco seasoning, tomato paste, and a splash of water, cooking for 7-10 minutes.
  6. Assemble by layering the beef mixture over the cauliflower rice and topping with cheddar cheese.
  7. Bake for 10-15 minutes or until cheese is melted and bubbly.
  8. Spread sour cream over the melted cheese and sprinkle more cheddar on top.
  9. Let sit for a few minutes before serving with optional toppings.
