Step-by-Step Instructions
  1. Sprinkle 1 ½ teaspoons of powdered gelatine over 2 tablespoons of water in a small saucepan. Allow it to sit for about 3 minutes to soften.
  2. Gently heat the saucepan over low-medium heat, stirring continuously until the gelatine completely dissolves. It should take about 2–3 minutes.
  3. Add ¼ cup of sugar to the dissolved gelatine and stir until fully dissolved. Mix in 1 ¼ cups of mango purée, ¾ cup of thickened cream, and ½ teaspoon of vanilla extract.
  4. Carefully pour the mango mixture into ramekins, filling them to about ¾ full. Refrigerate for at least 3 hours, or until set.
