  • 1 teaspoon Garlic Powder Fresh minced garlic can be used instead.
  • 1 teaspoon Oregano Can substitute with Italian seasoning.
  • 1 teaspoon Basil Can substitute with Italian seasoning.
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
  • ½ teaspoon Red Pepper Flakes Feel free to omit for a milder dish.
For the Tzatziki
  • 1 cup Greek Yogurt Can be swapped with low-fat yogurt or sour cream.
  • 1 medium Cucumber Grate and squeeze to eliminate excess moisture.
  • 1 clove Minced Garlic Add more or less depending on preference.
  • 1 tablespoon Fresh Dill Can omit or use dried dill as substitute.
For the Bowl
  • 2 cups Cooked Rice Use white, brown rice, or quinoa.
  • 1 cup Tomatoes Cherry tomatoes are an easy substitute.
  • 2 cups Lettuce Mixed greens or spinach can be used.
  • ½ medium Red Onion Can substitute with green onions.
  • ½ cup Feta Cheese Omit for vegan version or use tofu feta.
  • ¼ cup Fresh Parsley Replace with cilantro or omit if desired.

Method
 

Preparation
  1. In a medium bowl, whisk together olive oil, lemon zest, lemon juice, honey, garlic powder, oregano, basil, salt, black pepper, and red pepper flakes until well combined.
  2. Pound the chicken breasts to a uniform ½-inch thickness, then coat with the marinade. Refrigerate for at least 30 minutes, preferably 2-4 hours.
  3. In a mixing bowl, combine Greek yogurt, grated cucumber, lemon juice, and minced garlic. Add salt and fresh dill, mixing until smooth.
  4. Prepare vegetables by dicing tomatoes and cucumber, slicing red onion, chopping lettuce, and crumbling feta cheese.
  5. Cook chicken in an air fryer at 380°F for 7–11 minutes or in a skillet for 7–8 minutes per side.
  6. Let the chicken rest for 5 minutes after cooking to redistribute juices.
  7. Assemble bowls with cooked rice, chopped vegetables, sliced chicken, and drizzle with tzatziki. Sprinkle with feta and parsley.
  8. Serve immediately with fresh lemon wedges.
