Cooking Steps
- Heat 2 tablespoons of olive oil in a large skillet over medium heat. Once the oil is shimmering, add 1 chopped onion and sauté for 3-5 minutes until translucent.
- Stir in 2 minced garlic cloves and cook for an additional minute until fragrant.
- Add 1 pound of ground beef, breaking it up with a spatula. Cook for 6-8 minutes until browned.
- Incorporate 1 sliced red bell pepper and 1 diced zucchini. Sauté for about 5 minutes until softened.
- Add 1 cup of halved cherry tomatoes, 1 teaspoon of dried oregano, 1 teaspoon of ground cumin, 1 teaspoon of paprika, and season with salt and black pepper. Cook for 3-4 minutes.
- Stir in ½ cup of sliced Kalamata olives and chopped parsley, mixing thoroughly.
- Remove from heat and drizzle with juice from half a lemon. Mix gently.
- Plate the stir fry and sprinkle with crumbled feta cheese. Serve immediately.
