Ingredients
  

For the Stir Fry
  • 1 lb Ground Beef lean preferred
  • 2 tablespoon Olive Oil for sautéing
  • 1 Onion chopped
  • 2 Garlic Cloves minced
  • 1 Red Bell Pepper sliced
  • 1 Zucchini diced
  • 1 cup Cherry Tomatoes halved
  • 1 teaspoon Dried Oregano
  • 1 teaspoon Ground Cumin
  • 1 teaspoon Paprika
  • to taste Red Pepper Flakes optional
  • to taste Salt
  • to taste Black Pepper
  • ½ cup Kalamata Olives sliced
  • a handful Fresh Parsley chopped
  • ½ Lemon Juice from half a lemon
  • to taste Feta Cheese crumbled

Method
 

Cooking Steps
  1. Heat 2 tablespoons of olive oil in a large skillet over medium heat. Once the oil is shimmering, add 1 chopped onion and sauté for 3-5 minutes until translucent.
  2. Stir in 2 minced garlic cloves and cook for an additional minute until fragrant.
  3. Add 1 pound of ground beef, breaking it up with a spatula. Cook for 6-8 minutes until browned.
  4. Incorporate 1 sliced red bell pepper and 1 diced zucchini. Sauté for about 5 minutes until softened.
  5. Add 1 cup of halved cherry tomatoes, 1 teaspoon of dried oregano, 1 teaspoon of ground cumin, 1 teaspoon of paprika, and season with salt and black pepper. Cook for 3-4 minutes.
  6. Stir in ½ cup of sliced Kalamata olives and chopped parsley, mixing thoroughly.
  7. Remove from heat and drizzle with juice from half a lemon. Mix gently.
  8. Plate the stir fry and sprinkle with crumbled feta cheese. Serve immediately.
