- Cook the Noodles: Prepare the lasagna noodles according to the package instructions, typically boiling them for 8–10 minutes until al dente. Drain and lay flat.
- Mix Filling: In a large mixing bowl, combine the ricotta cheese, chopped spinach, beaten egg, and half of the shredded mozzarella. Stir until well combined.
- Assemble Roll Ups: Spread approximately ¼ cup of filling on each noodle, roll tightly, and place seam side down in a greased baking dish.
- Top with Sauce: Pour remaining marinara sauce over the roll ups, sprinkle with remaining mozzarella and Parmesan cheese.
