Step‑by‑Step Instructions
  1. Prepare the Stuffing. Cut toasted bread into small pieces, combine with spices, herbs, and vegetable broth in a large mixing bowl until well combined.
  2. Mix the Wet Ingredients. In a food processor, combine the seitan and remaining wet ingredients until slightly chunky.
  3. Combine Dry and Wet Ingredients. Mix dry ingredients in a separate bowl, then gradually fold in the wet mixture and knead gently for 2-3 minutes.
  4. Assemble the Roasts. Divide dough into portions, flatten slightly, place stuffing in center, fold edges and form into roasts.
  5. Prepare the Gravy. Whisk gravy ingredients together until smooth and layer in a baking dish with mushroom slices.
  6. Arrange the Roasts in the Dish. Place assembled roasts on top of mushroom layer, cover with aluminum foil.
  7. Bake to Perfection. Preheat oven to 360°F and bake covered for 30 minutes, then uncovered for 15 until golden.
