Method
 

Caramelizing Onions
  1. Melt 2 tablespoons of butter in a skillet over medium-low heat. Add one sliced large onion, a pinch of salt, and a splash of water. Cook for 10-15 minutes until deep golden brown, stirring occasionally. Stir in 2 minced garlic cloves in the last minute of cooking.
Cooking Steak
  1. Season ribeye steak with coarse-ground pepper and salt. Heat 1 tablespoon of butter in the same skillet over medium-high heat, sear steak for 3-4 minutes per side until it reaches an internal temperature of 130°F for medium-rare. Cover loosely with foil and let it rest for 5 minutes.
Preparing Sandwich
  1. Slice the baguette in half. Layer with sliced ribeye, cheese, and caramelized onions. Broil for 2-3 minutes until the cheese is melted and bubbly.
Assembling Greens
  1. Toss arugula with olive oil and lemon juice in a bowl. Top melted cheese sandwich with seasoned arugula, spread garlic aioli on the top half of the baguette and place it atop the sandwich.
