- In a large bowl, whisk together olive oil, minced garlic, ground cumin, ground coriander, smoked paprika, ground turmeric, ground cinnamon, salt, black pepper, and the juice of lemon.
- Add chicken thighs to the marinade, ensuring all pieces are thoroughly coated. Cover and let marinate for at least 15 minutes.
- Slice the red onion into thin rings and place at the bottom of the slow cooker.
- Layer the marinated chicken on top of the sliced onions in the slow cooker. Cook on low for 4 hours.
- After 4 hours, check that the chicken is cooked through and tender.
- Shred or slice the chicken as desired and serve in pita bread with fresh vegetables.
