For the Meatloaf
  • 1 pound lean ground beef 80/20 for juiciness
  • 8 ounces fresh mushrooms finely chopped cremini or button
  • 1 cup Swiss cheese shredded
  • 1 cup breadcrumbs plain or panko-style
  • 1 large egg
  • 1 medium onion finely chopped or grated
  • 1 teaspoon salt to taste
  • 1 teaspoon garlic powder
Optional Topping
  • 1 cup additional Swiss cheese for topping
  • 2 tablespoons glaze mixture of ketchup and brown sugar

Method
 

Steps
  1. Preheat your oven to 350°F (175°C).
  2. Sauté one finely chopped medium onion with a tablespoon of olive oil for about 3-4 minutes.
  3. Add 8 ounces of finely chopped mushrooms and cook until browned, about 5-7 minutes. Set aside to cool slightly.
  4. In a large mixing bowl, combine 1 pound of lean ground beef with the cooled onion and mushroom mixture, breadcrumbs, egg, salt, pepper, and garlic powder.
  5. Shape the mixture into a loaf on parchment paper or in a lined baking dish. Optionally layer additional Swiss cheese on top.
  6. Bake in the preheated oven for 60-70 minutes until the internal temperature reaches 160°F (70°C).
  7. Let the meatloaf rest for 10 minutes before slicing.
