  • 1 cup protein (tofu or chicken) firm tofu or diced chicken

Step‑by‑Step Instructions
  1. Begin by thoroughly washing your carrots and any additional vegetables you'd like to include, such as bell peppers or snap peas. Slice the carrots into thin, even pieces to ensure they cook uniformly. Prepare the garlic by mincing it finely.
  2. In a large, heavy-bottomed pot, add 2 tablespoons of cooking oil over medium heat. Allow the oil to warm up until it shimmers.
  3. Once the oil is hot, stir in the minced garlic and sauté for around 30 seconds until golden and fragrant.
  4. Add the sliced carrots to the pot, stirring continuously for about 3 minutes. Then, incorporate any other chopped vegetables. Continue to stir-fry for 5-7 minutes until tender-crisp.
  5. Pour in the soy sauce and stir well, allowing it to cook for another 2-3 minutes until the vegetables are coated evenly.
  6. Once everything is combined and heated through, remove the pot from the heat. Transfer the stir fry to serving plates, garnishing with sesame seeds or a squeeze of lime juice.
