  • 8 oz Cream Cheese Use mascarpone for a richer taste.
For the Chocolate Coating
  • 12 oz Semi-sweet Baking Chocolate Milk chocolate can be used for a sweeter option.
For the Decorations
  • 30 pieces Mini Candy Button Eyes Substitute with dots of melted white chocolate if unavailable.
  • 1 cup Miniature Semi-sweet Chocolate Chips Feel free to mix in other chocolate varieties.
  • 1 oz White Decorating Icing Can be substituted with melted white chocolate.

Equipment

  • food processor
  • microwave-safe bowl
  • Parchment paper
  • cookie scoop

Method

Step-by-Step Instructions
  1. Begin by finely crushing 9 OREO cookies in a food processor until they resemble fine crumbs. Set aside any remaining cookies and break them in half to use as wings later.
  2. In a mixing bowl, combine the crushed OREO cookies with softened cream cheese. Use a spatula to blend the two ingredients thoroughly until the mixture forms a thick, cohesive dough. Shape the mixture into 1-inch balls.
  3. Melt semi-sweet baking chocolate and dip the end of each lollipop stick in the melted chocolate. Insert the stick into the center of each dough ball and place them back on the baking sheet. Freeze for about 10 minutes.
  4. Dip each ball into the melted chocolate for an even coat. Lift them out with a fork, letting excess chocolate drip back into the bowl. Place them back on the parchment paper, freezing again if needed.
  5. To create bat wings, take the cookie halves and cut one end flat for easier attachment. Dip the flat edge in melted chocolate and stick each half into the sides of the coated cookie ball.
  6. Press mini candy button eyes onto the front of each ball and drizzle white decorating icing for details. Get creative with your decorations.
  7. Place the finished pops in the refrigerator for at least one hour to allow the chocolate to set completely.
