Step‑by‑Step Instructions for Parmesan Chicken Meatloaf
  1. Preheat your oven to 200°C (400°F) and line a baking sheet with aluminum foil.
  2. In a skillet, heat olive oil over medium heat. Add chopped onion and minced garlic, sauté for 5-7 minutes until soft.
  3. In a mixing bowl, combine the cooled onion and garlic with ground chicken, breadcrumbs, milk, Parmesan cheese, egg, parsley, Italian seasoning, and salt.
  4. On the prepared baking sheet, shape two-thirds of the chicken mixture into a loaf and make an indentation for mozzarella.
  5. Add mozzarella into the indentation, then cover with remaining meat mixture.
  6. Spread marinara sauce over the top of the meatloaf and bake for about 45 minutes.
