  1. Begin by washing your ripe peaches under cool water. Using a sharp knife, slice them into thin wedges and transfer them into a large bowl.
  2. Take a handful of cherry tomatoes and slice them in half. Rinse your arugula or mixed greens thoroughly, then pat them dry. Combine both in the bowl with the peaches.
  3. In the bowl, gently toss everything together using your hands or salad tongs, taking care not to bruise the peaches.
