  • ½ cup Dry White Wine Choose a drinkable wine.
  • 1 cup Heavy Cream Can use half-and-half for lighter option.
  • 1 tablespoon Lemon Juice Fresh is always best!
  • 2 sprigs Fresh Thyme Substitute with dill or rosemary as desired.

Step‑by‑Step Instructions
  1. Pat the cod fillets dry with paper towels, then season both sides with salt, black pepper, garlic powder, and onion powder.
  2. Heat olive oil and 1 tablespoon of butter in a large skillet over medium-high heat.
  3. Add the seasoned cod fillets to the pan, cooking for 3-4 minutes per side until golden brown and cooked through.
  4. Remove the cod from the skillet and keep warm under foil.
  5. In the same skillet, lower the heat and add the remaining butter, minced garlic, and flour, stirring for 1 minute until fragrant.
  6. Slowly pour in dry white wine and lemon juice, stirring continuously, and allow to simmer for 3-4 minutes.
  7. Stir in heavy cream and fresh thyme, seasoning to taste with salt and pepper, and let simmer for another 3-5 minutes.
  8. Return the cod fillets to the skillet, spooning sauce over the top and allow to warm for an additional 2 minutes.
  9. Plate the cod fillets draped in sauce and garnish with thyme or parsley; serve immediately with rice or bread.
