Ingredients
  

For the Salad
  • 4 cups cabbage finely chopped
  • 2 medium carrots shredded
  • 1 cup shelled edamame boiled
  • 1 cup chow mein noodles crispy
  • ½ cup roasted cashews optional: Thai chili cashews for spice
For the Dressing
  • ¼ cup toasted sesame oil
  • ½ cup Greek yogurt or mayo omit for vegan
  • 2 tablespoons vinegar
  • 1 tablespoon sugar adjust to taste

Method
 

Preparation and Assembly
  1. Chop the cabbage, shred the carrots, and boil the edamame until tender.
  2. Combine sesame oil, Greek yogurt or mayo, vinegar, and sugar in a jar and shake until smooth to make the dressing.
  3. In a large bowl, mix cabbage, carrots, edamame, chow mein noodles, and cashews.
  4. Drizzle the dressing over the salad and toss gently before serving.
  5. Serve immediately in a large bowl or on individual plates.
