  • 1 cup Light brown sugar Coconut sugar can be used as a refined alternative.
  • 4 tablespoons Unsalted butter Vegan butter works as a dairy-free option.
  • 2 tablespoons Cornflour
For the Crumble Topping
  • 2 cups Gluten Free Self-Raising Flour Substitute with gluten-free plain flour and baking powder if needed.
  • 1 cup Sugar Light brown sugar works well here too.
  • 4 tablespoons Cold butter Use firm butter for best results.

Method
 

Preparation Steps
  1. Preheat your oven to 180°C (Fan 160°C or Gas Mark 5).
  2. Chop the rhubarb into 1-inch chunks and slice the pears.
  3. In a medium saucepan, combine the chopped rhubarb, pears, butter, light brown sugar, and cornflour. Cook over low heat for about 5 minutes.
  4. In a mixing bowl, add the gluten-free flour and sugar for the topping, and cut in the cold butter until the mixture resembles breadcrumbs.
  5. Spread the softened fruit mixture evenly in a baking dish and sprinkle the crumble topping across it.
  6. Bake in the preheated oven for 35-40 minutes, until golden brown.
  7. Let cool for a few minutes before serving warm.
