Step-by-Step Instructions

  2. Halve the butternut squash and scoop out the seeds. Place cut-side up on a baking sheet lined with parchment paper.
  3. Peel garlic cloves and arrange them alongside the squash. Drizzle with olive oil.
  4. Sprinkle salt and pepper over both squash and garlic. Roast for 35–40 minutes until fork-tender.
  5. Once roasted, cool slightly and scoop the squash flesh into a mixing bowl.
  6. Add roasted garlic, nutmeg, olive oil, and almond milk. Mash until smooth and creamy.
  7. Adjust seasoning to taste and garnish with fresh herbs before serving.
