Cooking Instructions
  1. Preheat your oven to 425°F (220°C). Gather a baking sheet lined with parchment paper.
  2. Rinse and dry mini potatoes thoroughly. Make thin slices along the length of each potato, leaving about ¼ inch between cuts.
  3. In a mixing bowl, toss sliced mini potatoes with olive oil until well-coated.
  4. Sprinkle sea salt, black pepper, garlic powder, and onion powder over the potatoes. Rub the seasonings in for maximum flavor.
  5. Place the seasoned potatoes on the prepared baking sheet, cut side up, spacing them evenly.
  6. Bake the potatoes for 30-35 minutes until the edges are golden brown and crispy.
  7. While potatoes bake, mix together sour cream, mayonnaise, Cajun seasoning, and lemon juice. Adjust salt and pepper to taste.
  8. Once baked, drizzle potatoes with remaining olive oil and garnish with freshly chopped parsley.
