Method
 

Steps
  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. Whisk together flour, baking powder, kosher salt, cocoa powder, and espresso powder in a medium bowl.
  3. Melt butter and mix with granulated and brown sugar, whisk until blended.
  4. Melt chocolate chips in the microwave, let cool slightly, then add to the butter-sugar mixture.
  5. Add eggs and vanilla extract to the chocolate mixture and whisk until smooth.
  6. Fold the dry ingredients into the wet mixture until just combined.
  7. Scoop tablespoon-sized mounds of dough onto prepared baking sheets, spacing them 2 inches apart.
  8. Bake for 10 to 12 minutes, until slightly underbaked.
  9. Sprinkle a pinch of salt on each cookie immediately after removing from the oven, then cool for 5 minutes.
