Method

Step-by-Step Instructions for Salted Honey Pie
  1. Preheat your oven to 375°F (190°C). Fit your 9-inch pie crust into a pie plate, chill, line with foil, and fill with weights. Bake for 12–15 minutes, then remove weights and foil, baking for another 5 minutes until golden. Cool slightly.
  2. Whisk together melted butter, sugar, cornmeal, and salt until combined. Add vinegar/lemon juice, vanilla, and honey, stirring well. Add eggs one at a time, whisking after each, then stir in heavy cream until smooth.
  3. Pour custard filling into the pre-baked crust and bake at 350°F (175°C) for 40–50 minutes until slightly jiggly in the center. Tent with foil if crust browns too quickly.
  4. Cool the pie on a wire rack for at least 2 hours to set properly.
  5. Before serving, sprinkle with flaky sea salt and cut into slices. Serve alone or with fresh berries.

Ensure room temperature ingredients for a smoother filling. Blind bake the crust correctly to avoid sogginess. Allow the pie to cool thoroughly before slicing for the best texture.
