Preparation
- Preheat your oven to 350°F (175°C).
- In a large skillet, heat the olive oil over medium-high heat. Add the ground beef and cook until browned, about 7-10 minutes.
- Add chopped onion to the beef and cook until softened, about 5 minutes.
- Stir in chili powder, paprika, garlic powder, onion powder, and cumin. Cook for another 5 minutes until fragrant.
- Cover the casserole dish with a layer of crushed tortilla chips.
- Mix beef mixture with black beans, corn, salsa, and 1 cup of cheddar. Combine well.
- Spread beef mixture over the crushed tortilla chips evenly.
- Sprinkle remaining cheddar cheese on top.
- Bake for 15-20 minutes until cheese is melted and bubbly.
- Let cool for a few minutes and serve with your choice of toppings.
