  • 12 oz Sausage Options include Cajun, andouille, smoked sausage, or turkey sausage.
  • 1 large Red Bell Pepper Substitute with any mild pepper variety.
  • 1 large Zucchini Yellow squash works as well.
  • ½ teaspoon Chili Powder Adjust to your taste.
  • Fresh Cilantro (chopped) Optional; use parsley instead if preferred.

Method
 

Step-by-Step Instructions
  1. Heat 1 tablespoon of olive oil in a large cast-iron skillet over medium heat for about 1–2 minutes until shimmering.
  2. Slice 12 oz of your chosen sausage into ½-inch thick coins and cook in the skillet without stirring for about 5 minutes.
  3. Flip the sausage pieces and cook for an additional 3 minutes, then remove and keep warm.
  4. In the same skillet, add one large diced red bell pepper and cook for approximately 4 minutes.
  5. Add one sliced zucchini and sauté for another 3 minutes.
  6. Add corn kernels and the cooked sausage, stir to combine for about 2 minutes.
  7. Sprinkle ½ teaspoon of chili powder over the mixture and lower heat to warm together for about 3 minutes.
  8. Remove from heat and top with freshly chopped cilantro before serving.
