- Heat 1 tablespoon of olive oil in a large cast-iron skillet over medium heat for about 1–2 minutes until shimmering.
- Slice 12 oz of your chosen sausage into ½-inch thick coins and cook in the skillet without stirring for about 5 minutes.
- Flip the sausage pieces and cook for an additional 3 minutes, then remove and keep warm.
- In the same skillet, add one large diced red bell pepper and cook for approximately 4 minutes.
- Add one sliced zucchini and sauté for another 3 minutes.
- Add corn kernels and the cooked sausage, stir to combine for about 2 minutes.
- Sprinkle ½ teaspoon of chili powder over the mixture and lower heat to warm together for about 3 minutes.
- Remove from heat and top with freshly chopped cilantro before serving.
