  • 1 teaspoon Sweet paprika Smoked paprika can be used for a smoky flavor.
  • 1 teaspoon Organic onion powder No direct substitution needed.
  • 1 teaspoon Garlic powder Fresh minced garlic can be substituted.
  • 1 teaspoon Thyme Oregano can be used as a substitute.
  • 1 teaspoon Oregano Thyme can replace if necessary.
  • 0.25 teaspoon Cayenne pepper Adjust to taste.
  • to taste Black pepper Use to taste.
  • to taste Salt Use to taste.
For the Tortillas and Sauce
  • 8 tortillas Tortillas (flour or corn) Use gluten-free tortillas for a gluten-free option.
  • 1 cup Plain Greek yogurt Sour cream is a suitable substitute.
  • 1 lime Limes (zest & juice) Use lemon juice in a pinch.
  • 0.25 cup Cilantro May substitute with parsley if disliked.
For the Pineapple Salsa
  • 2 cups Fresh pineapple Canned pineapple can be used but will be less fresh.
  • 0.5 cup Red onion Soak in water to mellow flavor.
  • 1 each Jalapeno Remove seeds for a milder taste, or omit entirely.

Preparation Steps
  1. Prepare Blackening Seasoning: In a small bowl, combine equal parts sweet paprika, onion powder, garlic powder, thyme, oregano, cayenne pepper, black pepper, and salt. Whisk these ingredients together until well-blended.
  2. Make Cilantro Lime Sauce: In a mixing bowl, combine the zest and juice of one lime with a minced garlic clove, finely chopped cilantro, and a generous dollop of plain Greek yogurt. Stir until the mixture is uniform, then taste and adjust seasoning with salt as needed.
  3. Prepare Pineapple Salsa: Soak diced red onion in water for 5-10 minutes to mellow its sharpness. Drain and add to a bowl with diced fresh pineapple, sliced jalapeño, lime juice, and a pinch of salt. Toss until evenly mixed.
  4. Cook Blackened Tilapia: Heat a skillet over medium-high heat, adding a tablespoon of vegetable oil. Coat each tilapia fillet generously with the seasoning. Cook for about 3-5 minutes on each side until golden brown and flaky.
  5. Assemble Tacos: Break the tilapia into chunks and lay warm tortillas on a plate. Fill with pieces of blackened tilapia, top with pineapple salsa and drizzle with cilantro lime sauce.
