Step-by-Step Instructions for Sancocho Dominicano
  1. In a large pot, combine 1 pound each of chicken, beef, and pork. Season with salt, pepper, oregano, and thyme, mixing well to coat the meats. Cook for about 5-7 minutes until the meats start to brown.
  2. In a separate pan, heat oil over medium heat. Add the chopped onion, minced garlic, and chopped bell pepper. Sauté for about 5 minutes until they soften.
  3. Transfer the sautéed ingredients to the pot with the meats. Pour in 4 cups of water and bring to a vigorous boil. Skim off any foam and then cover.
  4. Let simmer gently for about 45 minutes to allow the meats to tenderize. Stir occasionally.
  5. Add the diced potatoes, sliced plantain, and chunks of corn to the pot. Stir gently to combine.
  6. Cover and simmer for an additional 30-40 minutes until the vegetables are tender.
  7. Taste and adjust seasoning with more salt and pepper as needed.
  8. Remove from heat and let sit for a few minutes before serving. Ladle into bowls.
  9. Serve with lime wedges on the side.
