For the Brussels Sprouts
  • 2 cups Brussels sprouts Trimmed and halved
  • 2 tablespoons chopped green onion Optional garnish
  • 1 tablespoon sesame seeds Optional topping

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, toss the halved Brussels sprouts with olive oil, salt, and pepper. Spread on one side of the baking sheet and bake for 5 minutes.
  3. Remove the baking sheet and place salmon fillets on the empty side. Drizzle with olive oil and season with salt and pepper.
  4. Return the baking sheet to the oven and bake salmon and Brussels sprouts together for 10-12 minutes.
  5. While baking, combine BBQ sauce, coconut aminos, rice vinegar, ginger, and a pinch of salt in a saucepan. Simmer for 5 minutes.
  6. Take the baking sheet out and glaze the Brussels sprouts with the sauce, reserving some for the salmon. Return to the oven for an additional 3-4 minutes.
  7. Remove from the oven, garnish with green onions and sesame seeds, and serve.
