- Unroll the sheets of puff pastry onto a clean, lightly floured surface. Drizzle honey evenly over each sheet.
- Sprinkle walnuts, blue cheese, Parmesan, and fresh thyme over the honey-drizzled pastry. Season with salt and pepper.
- Roll each sheet of pastry tightly from one end to the other, cut in half lengthwise.
- Twist each half into a coil or round shape and place on a lined baking sheet.
- Lightly brush the tops of the twisted pastries with milk.
