- Begin by opening the cans of salmon and draining the liquid thoroughly. Flake the salmon with a fork in a large mixing bowl.
- Add the breadcrumbs, finely chopped onion, diced bell pepper, eggs, Dijon mustard, lemon juice, garlic powder, salt, and black pepper to the bowl. Mix until well incorporated.
- Scoop portions and shape them into patties about 2-3 inches in diameter. Place on a platter.
- Pour enough olive oil into a skillet to cover the bottom about ¼ inch deep and heat over medium-high heat.
- Carefully place the patties in the hot oil, fry for about 4-5 minutes on each side until golden brown.
- Transfer the patties onto a plate lined with paper towels to soak up excess oil. Serve warm.
