  • 1 cup Feta Cheese crumbled finely
  • 1 medium Shallot finely chopped
  • 2 cloves Garlic minced
  • 1 large Egg whisked lightly
  • 1 cup Breadcrumbs
  • 2 tablespoons Extra Virgin Olive Oil
  • 1 teaspoon Lemon Zest
  • 1 teaspoon Kosher Salt
  • 1 teaspoon Ground Black Pepper
For the Tzatziki Sauce
  • 1 cup Greek Yogurt whole milk preferred
  • 1 medium Cucumber finely grated
  • 1 tablespoon Fresh Lemon Juice adjust to taste
  • 1 clove Minced Garlic
  • 2 tablespoons Fresh Herbs (Mint & Dill) or dried herbs if fresh aren’t available

Step-by-Step Instructions for Chicken Feta Meatballs
  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine the ground chicken, fresh oregano, fresh mint, fresh dill, crumbled feta cheese, finely chopped shallot, minced garlic, and lightly whisked egg. Add in breadcrumbs, extra virgin olive oil, lemon zest, kosher salt, and ground black pepper. Mix until combined.
  3. Scoop about 1.5 tablespoons of the mixture and roll into meatballs, placing them on the prepared baking sheet.
  4. Bake the meatballs for 16-20 minutes, until golden and reach an internal temperature of 165°F (74°C).
  5. While the meatballs bake, mix together Greek yogurt, grated cucumber, fresh lemon juice, minced garlic, and fresh herbs to prepare the tzatziki sauce.
  6. Serve the warm meatballs with homemade tzatziki sauce.
