- Thinly slice the beef sirloin or flank steak against the grain. In a bowl, combine with soy sauce, cornstarch, Shaoxing wine, and sesame oil. Marinate for 15-20 minutes.
- In a small bowl, whisk together remaining soy sauce, oyster sauce, sugar, and black pepper. Set aside.
- Heat vegetable oil in a large wok over high heat. Add marinated beef and stir-fry for 2-3 minutes until browned. Remove and set aside.
- In the same wok, add more vegetable oil, garlic, and ginger. Stir for 30 seconds until fragrant.
