  • 1 pound beef sirloin or flank steak or ribeye or skirt steak
For the Vegetables
  • 1 yellow or white onions thinly sliced
  • 2 green onions chopped
For the Sauce
  • 2 tablespoons soy sauce or tamari for gluten-free
  • 1 tablespoon oyster sauce or hoisin sauce as alternative
  • 1 teaspoon sugar brown sugar for extra depth
For Cooking
  • 2 tablespoons vegetable oil canola or peanut oil
  • 1 tablespoon cornstarch
  • 1 teaspoon sesame oil or omit if necessary
Aromatics
  • 2 cloves garlic minced
  • 1 inch ginger freshly minced
For Optional Serving
  • 4 cups cooked rice or noodles jasmine, brown rice, or udon noodles

Method
 

Step‑by‑Step Instructions
  1. Thinly slice the beef sirloin or flank steak against the grain. In a bowl, combine with soy sauce, cornstarch, Shaoxing wine, and sesame oil. Marinate for 15-20 minutes.
  2. In a small bowl, whisk together remaining soy sauce, oyster sauce, sugar, and black pepper. Set aside.
  3. Heat vegetable oil in a large wok over high heat. Add marinated beef and stir-fry for 2-3 minutes until browned. Remove and set aside.
  4. In the same wok, add more vegetable oil, garlic, and ginger. Stir for 30 seconds until fragrant.
  5. Add onions to the wok and stir-fry for 2-3 minutes until soft and slightly charred.
  6. Return beef to the wok, add prepared sauce, and stir-fry for another 2-3 minutes until beef is cooked and sauce thickens.
  7. Toss in green onions and stir for a minute. Serve immediately over rice or noodles.
