For the Tacos
  • 8 pieces Tortillas Corn for gluten-free option, flour for softer texture
  • 2 cups Cabbage Any type is suitable, lettuce can be an alternative
For the Pineapple Salsa
  • 1 cup Pineapple Canned can be used if fresh isn't available
  • ½ cup Red Onion Shallots can be used for a milder flavor
  • 1 piece Jalapeño Remove seeds for less heat
  • 2 tablespoons Lime Juice White vinegar can be used if lime isn't available
  • ¼ cup Cilantro Parsley can be used as an alternative

Method
 

Preparation Steps
  1. Preheat your grill or grill pan to medium-high heat, around 400°F (200°C).
  2. In a medium bowl, whisk together honey, chipotle chili powder, garlic powder, cumin, olive oil, salt, and pepper until well combined.
  3. Coat the salmon fillets generously with the marinade and let sit at room temperature for about 15-30 minutes.
  4. Prepare your pineapple salsa by combining diced pineapple, red onion, jalapeño, lime juice, and a pinch of salt in a separate bowl.
  5. Grill the marinated salmon for 4-5 minutes per side, or until opaque and flakes easily with a fork.
  6. Let the salmon rest for a couple of minutes and then flake into bite-sized pieces.
  7. Warm your tortillas on the grill for about 30 seconds per side to make them pliable.
  8. Assemble the tacos by placing shredded cabbage, flaked salmon, and pineapple salsa on each tortilla.
  9. Serve immediately, garnished with fresh cilantro.
