  • 2 tablespoons Olive Oil neutral cooking oil can be used
  • 1 medium Onion diced
  • 2 cloves Garlic minced
  • 2 cups Roasted Red Peppers can use fresh if preferred
  • 1 cup Vegetable Broth chicken broth is a great substitute
  • 1 teaspoon Smoked Paprika regular paprika can be used
  • 1 teaspoon Dried Oregano fresh oregano is preferable
  • to taste Salt and Pepper season to your preference
For the Cod
  • 4 fillets Cod can substitute with tilapia or haddock
  • ¼ cup Fresh Parsley finely chopped for garnish

Method
 

Step-by-Step Instructions
  1. Heat 2 tablespoons of olive oil over medium heat in a large skillet for about 2 minutes until shimmering.
  2. Add 1 diced onion to the skillet and sauté for about 5 minutes until translucent and slightly golden.
  3. Add 2 minced garlic cloves and cook for 1 minute, stirring constantly until fragrant.
  4. Incorporate 2 cups of roasted red peppers, 1 cup of vegetable broth, 1 teaspoon of smoked paprika, and 1 teaspoon of dried oregano. Season with salt and pepper, simmer for about 10 minutes.
  5. Blend the sauce using an immersion blender until smooth, or leave it slightly chunky if preferred.
  6. Place the cod fillets in the skillet, cover, and cook over medium-low heat for 8-10 minutes until opaque and flaky.
  7. Remove from heat and garnish with freshly chopped parsley before serving.
