- In a small bowl, combine mayonnaise (or Greek yogurt), lemon juice, diced pickles, Dijon mustard, and sugar. Stir until creamy and set aside.
- Lightly coat a fry pan with oil, heat over medium heat, and toast the inner sides of the burger buns until golden brown, about 2-3 minutes.
- Rinse shrimp under cold water. Chop 15 shrimps into small pieces, leaving 5 larger for texture. Pat dry with a paper towel.
- In a medium bowl, mix chopped shrimp, salt, beaten egg, parsley flakes, diced onions, potato starch, and breadcrumbs until well combined.
- Shape the mixture into two equal round patties and optionally coat with extra breadcrumbs.
- Heat oil for shallow frying in the fry pan over medium-high heat. Fry patties for about 3-4 minutes per side until golden brown.
