  • 1.5 pounds Baby Red Potatoes Halved or quartered
  • 1.5 pounds Yukon Gold Potatoes Halved or quartered
For the Seasoning
  • 2 tablespoons Fresh Rosemary Minced
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Salt
  • 2 tablespoons Olive Oil

Method
 

Step-by-Step Instructions
  1. Preheat the grill to medium-high heat, around 400°F.
  2. Halve or quarter the baby red potatoes into 1"x1" pieces.
  3. Mince the fresh rosemary and add it to the potatoes.
  4. Sprinkle garlic powder, salt, and olive oil onto the potato mixture and toss.
  5. Lay out a large sheet of aluminum foil and place a smaller sheet of parchment on top.
  6. Spread the seasoned potato mixture onto the parchment and cover it with another layer of parchment.
  7. Seal the packet tightly with additional aluminum foil.
  8. Place the sealed packet on the grill and cook for about 12 minutes.
  9. Flip the packet and continue grilling for an additional 12 minutes.
  10. Remove the packet from the grill and let it cool slightly before opening.
  11. Garnish with additional fresh rosemary if desired.
