- Preheat the grill to medium-high heat, around 400°F.
- Halve or quarter the baby red potatoes into 1"x1" pieces.
- Mince the fresh rosemary and add it to the potatoes.
- Sprinkle garlic powder, salt, and olive oil onto the potato mixture and toss.
- Lay out a large sheet of aluminum foil and place a smaller sheet of parchment on top.
- Spread the seasoned potato mixture onto the parchment and cover it with another layer of parchment.
- Seal the packet tightly with additional aluminum foil.
- Place the sealed packet on the grill and cook for about 12 minutes.
- Flip the packet and continue grilling for an additional 12 minutes.
- Remove the packet from the grill and let it cool slightly before opening.
- Garnish with additional fresh rosemary if desired.
