- In a medium bowl, combine ketchup, sweet chilli sauce, crushed garlic, minced ginger, soy sauce, and salt. Whisk until well blended.
- Cut the chicken thighs into bite-sized pieces and place in a bowl. Pour in the majority of the marinade, coating each piece. Cover and marinate in the refrigerator for at least 30 minutes.
- Soak bamboo skewers in boiling water for about 10 minutes to prevent burning.
- Cut vegetables. Thread pieces of marinated chicken, pineapple, onion, and bell peppers onto skewers, alternating for color and flavor.
- Preheat grill to medium-high heat. Cook skewers for 10-15 minutes, turning occasionally until chicken reaches an internal temperature of 165°F.
- Remove skewers from heat and rest for 5 minutes before serving.
