Step-by-Step Instructions
  1. In a medium bowl, combine ketchup, sweet chilli sauce, crushed garlic, minced ginger, soy sauce, and salt. Whisk until well blended.
  2. Cut the chicken thighs into bite-sized pieces and place in a bowl. Pour in the majority of the marinade, coating each piece. Cover and marinate in the refrigerator for at least 30 minutes.
  3. Soak bamboo skewers in boiling water for about 10 minutes to prevent burning.
  4. Cut vegetables. Thread pieces of marinated chicken, pineapple, onion, and bell peppers onto skewers, alternating for color and flavor.
  5. Preheat grill to medium-high heat. Cook skewers for 10-15 minutes, turning occasionally until chicken reaches an internal temperature of 165°F.
  6. Remove skewers from heat and rest for 5 minutes before serving.
