  • ¼ cup Fresh Parsley Chopped
  • 2 cloves Garlic Minced or pressed
  • 2 tablespoons Extra Virgin Olive Oil
  • 2 tablespoons Lemon Juice Freshly squeezed
  • ½ cup Feta Cheese Can substitute with nutritional yeast
  • to taste Salt and Pepper

Method
 

Step‑by‑Step Instructions
  1. Preheat your oven to 375°F (190°C) and hollow out the zucchini halves for filling.
  2. Line a baking sheet with parchment paper and place the hollowed zucchini cut-side up.
  3. In a mixing bowl, combine quinoa, tomatoes, onion, bell pepper, parsley, garlic, olive oil, lemon juice, salt, and pepper.
  4. Stuff the quinoa mixture into the zucchini halves, pressing gently.
  5. Bake for 25 to 30 minutes until zucchini is tender and filling is heated through.
  6. Remove from the oven and top with crumbled feta cheese before serving.
