Ingredients
  

Chicken Marinade
  • 1 whole Chicken or bone-in chicken; boneless skinless thighs may be substituted
  • ¼ cup Olive Oil or avocado oil
  • 2 limes Fresh Lime Juice or lemon juice as a substitute
  • 4 cloves Garlic minced; garlic powder can be used if fresh is unavailable
  • 2 teaspoon Ground Cumin
  • 1 tablespoon Smoked Paprika or regular paprika with a dash of liquid smoke
  • 1 tablespoon Dried Oregano fresh can be used in adjusted quantity
  • to taste Salt Kosher salt recommended
  • to taste Black Pepper
Aji Verde Sauce
  • 1 cup Fresh Cilantro Leaves may substitute with parsley
  • 1-2 Jalapeños or Serrano Peppers adjust quantity for spiciness
  • ½ cup Mayonnaise or Greek yogurt for a lighter option
  • cup Cotija or Parmesan Cheese nutritional yeast for dairy-free

Method
 

Preparation
  1. In a mixing bowl, whisk together olive oil, lime juice, garlic, ground cumin, smoked paprika, dried oregano, salt, and black pepper. Set aside.
  2. Coat the chicken thoroughly with the marinade and refrigerate for at least 2 hours, preferably overnight.
  3. Preheat the oven to 425°F (220°C) and prepare a roasting pan.
  4. Arrange the marinated chicken skin-side up in the pan and roast for 45-60 minutes, until skin is crispy and juices run clear.
  5. Blend cilantro, jalapeños, garlic, mayonnaise, lime juice, olive oil, and cheese until smooth. Adjust seasoning to taste.
  6. Let chicken rest for 10 minutes before slicing and serve with Aji Verde.

Notes
