  • 1 cup Cherry tomatoes
  • ½ cup Kalamata olives
  • 1 each Lemon (zest and juice)
  • 2 teaspoons Dried oregano
  • 1 teaspoon Smoked paprika
  • ½ teaspoon Red pepper flakes (optional)
For Garnishing
  • ¼ cup Fresh parsley (chopped)
  • ¼ cup Fresh basil (torn)

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 425°F (220°C) and line a large baking sheet with parchment paper.
  2. In a mixing bowl, whisk together olive oil, minced garlic, lemon zest and juice, dried oregano, smoked paprika, sea salt, and black pepper.
  3. Coat the chicken thighs and baby potatoes with the marinade on the prepared baking sheet.
  4. Scatter the cherry tomatoes and Kalamata olives around the chicken and potatoes.
  5. Roast in the oven for 40 to 50 minutes until the chicken reaches 165°F (74°C) and the potatoes are golden brown.
  6. Remove from the oven, sprinkle with parsley and basil, and serve warm.
