- In a mixing bowl, whisk together olive oil, minced garlic, lemon zest and juice, dried oregano, smoked paprika, sea salt, and black pepper.
- Coat the chicken thighs and baby potatoes with the marinade on the prepared baking sheet.
- Scatter the cherry tomatoes and Kalamata olives around the chicken and potatoes.
- Roast in the oven for 40 to 50 minutes until the chicken reaches 165°F (74°C) and the potatoes are golden brown.
- Remove from the oven, sprinkle with parsley and basil, and serve warm.
