  • 2 cups Mashed Potatoes Any mashed potatoes work!
  • 1 can Canned or Fresh Salmon Ensure no skins or bones.
  • 1 large Egg Binds the mixture together.
  • 1 whole Lemon Zest and juice for maximum flavor.
  • ½ cup Flour Can substitute with gluten-free flour.
  • ¼ cup Chopped Parsley or Dill Feel free to substitute.
  • 1 teaspoon Salt Adjust seasoning according to taste.
  • 1 teaspoon Pepper Adjust seasoning according to taste.
  • 3 tablespoons Olive Oil For frying.
For the Chive and Garlic Sauce
  • 1 cup Greek Yogurt Can substitute with sour cream.
  • ¼ cup Chopped Chives Green onions can be used as substitute.
  • 2 cloves Garlic Adjust amount to suit preference.

Preparation Steps
  1. In a large mixing bowl, combine your leftover mashed potatoes with canned or cooked fresh salmon, breaking apart the salmon thoroughly.
  2. Add an egg, lemon zest, lemon juice, chopped parsley or dill, flour, salt, and pepper to the mixture. Stir until well combined.
  3. Form the mixture into evenly sized patties and dust each lightly with flour.
  4. Heat olive oil in a skillet over medium heat, and fry the patties for about 4–5 minutes on each side until golden-brown.
  5. For an air-fried option, preheat air fryer and cook the patties at 240°C (500°F) for 8–9 minutes until golden.
  6. While cooking, prepare the dipping sauce by mixing Greek yogurt, lemon juice, chopped chives, minced garlic, and seasoning.
  7. Serve the salmon cakes with the chive garlic sauce and enjoy warm.
