Preparation Steps
- In a large mixing bowl, combine your leftover mashed potatoes with canned or cooked fresh salmon, breaking apart the salmon thoroughly.
- Add an egg, lemon zest, lemon juice, chopped parsley or dill, flour, salt, and pepper to the mixture. Stir until well combined.
- Form the mixture into evenly sized patties and dust each lightly with flour.
- Heat olive oil in a skillet over medium heat, and fry the patties for about 4–5 minutes on each side until golden-brown.
- For an air-fried option, preheat air fryer and cook the patties at 240°C (500°F) for 8–9 minutes until golden.
- While cooking, prepare the dipping sauce by mixing Greek yogurt, lemon juice, chopped chives, minced garlic, and seasoning.
- Serve the salmon cakes with the chive garlic sauce and enjoy warm.
