Preparation Steps
  1. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Wash and dry the mini potatoes, then slice thinly along the length, stopping before cutting all the way through.
  3. Place sliced potatoes in a bowl and drizzle with olive oil; toss to coat evenly.
  4. Sprinkle sea salt, ground black pepper, garlic powder, and onion powder over the potatoes, rubbing the seasoning into the crevices.
  5. Transfer the seasoned potatoes to the baking sheet, cut-side up, spacing them out.
