  • 4 fillets Salmon substitute with trout if needed
  • 1.5 lbs Baby potatoes halved for even cooking
  • 3 tablespoon Olive oil or avocado oil
  • 1 teaspoon Garlic powder or fresh minced garlic
  • 1 teaspoon Paprika sweet or smoked
  • to taste Salt
  • to taste Pepper
For the Seasonal Veggies
  • 2 cups Seasonal vegetables like broccoli, zucchini, or bell peppers
For Garnishing
  • 1 whole Fresh lemon sliced
  • 2 tablespoon Chopped parsley or dill, thyme

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C) and prepare your baking sheet.
  2. Toss halved baby potatoes with olive oil, garlic powder, paprika, salt, and pepper.
  3. Spread the seasoned potatoes in a single layer on the baking sheet.
  4. Roast potatoes for about 15 minutes until tender and golden.
  5. Prep seasonal vegetables in a bowl with remaining olive oil, salt, and pepper.
  6. After 15 minutes, push potatoes to one side and add salmon fillets, seasoning them with lemon, salt, and pepper.
  7. Spread the veggies around the salmon on the baking sheet.
  8. Return the sheet to the oven and roast for 15-20 more minutes until salmon is opaque and flakes easily.
  9. Once done, garnish with fresh lemon slices and chopped parsley before serving.
